2. Data we process and purposes
Booking management: identification and contact data provided through the CoverManager booking module, for the purpose of managing your table booking, confirmations and service-related communications.
Gift voucher: identification, contact and billing data needed to purchase and deliver the gift voucher through CoverManager.
Enquiries: contact data provided by email or phone, for the purpose of handling your request.
Browsing: technical data processed through cookies, as set out in the cookie policy.
3. Legal basis
The legal bases for processing are: performance of a contract or pre-contractual measures (Art. 6.1.b GDPR) for bookings and gift vouchers; the data subject's consent (Art. 6.1.a GDPR) for third-party content such as Google Maps; and legitimate interest (Art. 6.1.f GDPR) in handling enquiries and keeping the site secure.
4. Recipients
CoverManager, S.L. acts as data processor for booking and gift-voucher management, under a processing agreement pursuant to Art. 28 GDPR.
Google Ireland Ltd. processes data when the Google Maps map is loaded, only if you accept third-party cookies. This may involve international transfers covered by the EU–US Data Privacy Framework and standard contractual clauses.
No data is disclosed to other third parties, except where legally required.
5. Retention periods
Booking and voucher data is kept for the duration of the customer relationship and thereafter for the limitation periods of applicable legal obligations (generally up to 6 years for commercial and tax purposes). Enquiry data is kept for as long as needed to handle the enquiry.
6. Your rights
You may exercise your rights of access, rectification, erasure, objection, restriction of processing and portability, and withdraw your consent at any time, by writing to info@desde1911.es or by post to Calle Vivero, 3 · 28040 Madrid, providing proof of identity.
You also have the right to lodge a complaint with the Spanish Data Protection Agency (www.aepd.es), C/ Jorge Juan, 6 · 28001 Madrid.
7. Security
Desde 1911 applies appropriate technical and organisational measures to ensure a level of security appropriate to the risk, in accordance with Art. 32 GDPR.
